Super Simple Cheesecake Recipe

This super simple cheesecake recipe was whipped up on a whim for my husband's birthday. It is on the healthier side and really is simple and fast to make.

Super Simple Cheesecake Recipe

Cake Ingredients

16oz room temperature cream cheese

8oz full fat plain Greek yogurt

Liquid stevia, to taste (I used 4 drops)

1t organic, pure vanilla extract

4 eggs

Crust Ingredients

6 Belvia soft baked cranberry cookies

1/2 stick room temperature organic, cultured butter

Pinch of cinnamon

Directions

Blend the crust ingredients in your kitchen aid mixer until well incorporated and pasty. Press flat and packed into a pie pan.

Bake for 8 minutes at 400°

While it bakes, mix all cake ingredient well. I used a wooden spoon. 

Reduce oven heat to 300°.

Pour cake mixture on top of crust in pie pan. Bake at 300° for 45 to 50 minutes. Cake will rise and fluff when fully baked. Test it by shaking your pie pan slightly. You don't want any jiggle in the middle. Place it directly in the refrigerator and it will fall and flatten. 

We garnished our Super Simple Cheesecake with fresh, organic berries and a smile face for dad's birthday.

My oldest son helped with each step and especially enjoyed decorating his homemade cheesecake.
